Instant Pot Banana Bread

  1. Microwave butter for about 20 seconds, until it is melted.
  2. Mash the banana with a fork.
  3. Whisk the egg.
  4. Gently combine all the ingredients together in a bowl. DO NOT OVER MIX.
  5. Pour one cup of water into the Instant Pot.
  6. Place the bowl onto the trivet and carefully lower the trivet into the Instant Pot.
  7. Seal the lid and pressure cook on high for 25 minutes, followed by a 25 minute natural release before manually releasing the rest of the pressure.
  8. Open the lid and quickly move it away from the pot to reduce the amount of water that falls onto the bread.
  9. Wait a minute or two until the trivet handles are cool enough to touch so you can lift it out of the Instant Pot and place it onto the counter to let the banana bread cool.
  10. Cut with a knife to serve and enjoy!
