Instant Pot Flan

Ingredients:
Caramel
- 1 tsp sugar
- 1/2 tsp water
Custard
- 1 egg
- 1 1/2 tbs sugar
- 3/8 cup milk OR 1/8 cup heavy whipping cream and 1/4 cup milk
- 1/2 tsp vanilla extract or instant coffee
Directions for Caramel
- In a microwave safe glass bowl, stir the sugar and water together.
- Microwave for aproximately 1 min 5 seconds, or until the caramel is the desired color.
- Take the bowl out of the microwave, holding it with a kitchen towel, and swirl the caramel around to coat the bottom until it hardens.
- Place the bowl aside on the kitchen towel and mix the other ingredients in another bowl.
Directions for Custard
- Wisk together the ingedients for the custard until combined.
- Place the trivet and 1 cup of water into the instant pot.
- Give a final whisk to the custard and carfully pour it into the bowl with the caramel.
- Place the bowl into the instant pot and presure cook on high for 4 minutes and natural release for 6 minutes.
- Slowly are carefully release the rest of the pressure (quick release) and remove the lid. Quickly move it away from the pot to prevent water from falling into the flan.
- Wait a minute or two until the trivet handles are cool enough to touch and then carry it out of the pot and onto the counter to cool.
- Once it is cool to the touch, put the flan into the fridge for an hour or overnight to set.
- Once you are ready to eat it, take it out of the fridge and grab a spoon. Enjoy!
