Ingredients:

Caramel

Custard

Directions for Caramel

  1. In a microwave safe glass bowl, stir the sugar and water together.
  2. Microwave for aproximately 1 min 5 seconds, or until the caramel is the desired color.
  3. Take the bowl out of the microwave, holding it with a kitchen towel, and swirl the caramel around to coat the bottom until it hardens.
  4. Place the bowl aside on the kitchen towel and mix the other ingredients in another bowl.

Directions for Custard

  1. Wisk together the ingedients for the custard until combined.
  2. Place the trivet and 1 cup of water into the instant pot.
  3. Give a final whisk to the custard and carfully pour it into the bowl with the caramel.
  4. Place the bowl into the instant pot and presure cook on high for 4 minutes and natural release for 6 minutes.
  5. Slowly are carefully release the rest of the pressure (quick release) and remove the lid. Quickly move it away from the pot to prevent water from falling into the flan.
  6. Wait a minute or two until the trivet handles are cool enough to touch and then carry it out of the pot and onto the counter to cool.
  7. Once it is cool to the touch, put the flan into the fridge for an hour or overnight to set.
  8. Once you are ready to eat it, take it out of the fridge and grab a spoon. Enjoy!
